You already know all about our Rose Gin , however … did you have any idea, that when it is paired with a properly brewed Kombucha* something amazing happens. We wanted to make the ‘cleanest cocktail in the world’ (that still tasted amazing) and this is the result.

A flavour unlike anything you have tasted before -the familiar, delicate, warming floral notes of the Rose Gin balanced by the tart and acidic nature of the Kombucha, blended with refreshing, organic Lemon and Lime.

*Kombucha is fermented tea. It is a combined yeast and bacterial fermentation that results in a drink that is slightly tart (that’s the flavour of the beneficial cultures). Our Kombucha is very low in sugars and entirely Organic.

Kombucha is made by adding a SCOBY (Symbiotic Culture of Bacteria and Yeast) to a pot of warm sweetened tea and leaving it for a couple of weeks to ferment. It’s actually quite similar to brewing beer or wine. By really carefully and tightly managing every stage of the process you get an extraordinary flavour quite unlike anything else.

NOTE: if you have never tased Kombucha before (especially the genuine, organic article like the one we use in our ‘Tink and Booch’) you might be in for quite a surprise.

Perhaps, a bit like our Negroni, it is an acquired, sophisticated taste - some of you (like us) will utterly adore the flavour and be beguiled by the delicate nuances, the layers of complexity, the vitality and freshness of the brew, the journey your taste buds are swept away on - the freshness of the Lemon and Lime, the spike of acidity, then a brush of sweetness followed by a lingering echo of the warmth of rose gin… a dance between the rose and the scoby.
